At ITADAKU, sustainability means a lot to us. Our chef has many years of experience in the sushi industry and have seen first hand the effects of overfishing. Poor management of the oceans and irresponsible fishing practices have put many of our favorite fish like bluefin tuna (hon maguro and toro), and river eel (unagi) at risk of extinction. The sushi industry must make a change and fast, so that we all might continue to enjoy the bounty and variety of foods we get from the ocean.
With knowledge comes responsibility. We work hard each day to make high quality sustainable sushi accessible to as many people as we can. We believe the best way to win a person's heart is through their tummy. We promise to make you something tasty and hope your satisfaction turns into a meal worth sharing.
