ITADAKU is a fast-casual sustainable sushi restaurant which strives to live out its meaning -- to enjoy (food and life) with gratitude. This philosophy will permeate everything we do from employee engagement and development to sourcing sustainable seafood and produce (local and organic when possible), complemented with the chef’s urban art that supports these values. ITADAKU is founded & owned by Mike Han, a Detroit visual artist and sushi chef. Han was formerly the Head Sushi Chef of Roka Akor in River North Chicago, a Michelin recommended restaurant and ranked as one of the "Top 10 Sushi Spots in the US" by Bon Appetit Magazine. Han has also worked under Master Sushi Chef Katsu Uechi, one of four Master Sushi Chefs in LA at his restaurants Katsuya by Starck, and Katsu-ya, a perennial Top 10 Restaurant in SoCal rated by Zagat. In addition to sushi, Han creates all the art for ITADAKU. As an artist, Mike works under the name “icon” (say "Mike Han" really fast a few times and you'll get it) and has painted murals for vitaminwater, the Detroit Riverfront Conservancy on the Dequindre Cut, the Woodward Windows Project, Derrick May's Transmat Gallery, Patrick Thompson Design, for several Metro-Detroit small businesses and even a mural in Japan. Han has exhibited his artwork throughout Metro Detroit and in Seoul, South Korea and has had artwork purchased for use in a feature film by Paramount Pictures.
Mike got his first taste of graffiti and sushi in NYC at 4 years old. Since then, Han has realized the unique connectedness of his two childhood passions. These ephemeral arts are the driving force for Han and ITADAKU. Mike paints under the pseudonym “icon” as it is defined as a symbol or graphic representation whose form suggests its meaning. Art by icon explores the relationship between creation and consumption, the ways in which we are connected, and how the choices we make impact our environment. The duality of life is contemplated daily as Han carefully selects his ingredients and materials in which to create and consume.
